    Totchos are tater tot nachos. They have a layer of crispy tots topped with seasoned beef, and 2 different types of cheese.

    Top the totchos with your favorite toppings for a fun twist on the comfort food classic. This easy dish takes just 30 minutes to make, so it's perfect for busy weeknights or to feed a crowd for game day!

    Ingredient notes and substitutions

    • Ground Beef: Substitute with ground turkey, or ground chicken instead.
    • Cheese: Use any combination of cheeses you prefer, such as pepper jack or queso fresco.
    • Salsa: Use your favorite salsa, or substitute with enchilada sauce for a different flavor.

    How to make totchos

    Step 1: Preheat oven to 425°F. Line a baking sheet with parchment paper.

    Step 2: Spread tater tots in a single layer on a large baking sheet. Bake for 20-25 minutes or until crispy, turning halfway through.

    Step 3: While tots are baking, brown ground beef in a skillet over medium heat. Drain excess fat.

    Step 4: Add broth, salsa and taco seasoning to the beef. Cook until well combined.

    Step 5: When tots are crispy, remove from oven and push them closer together on the baking sheet.

    Step 7: Return to oven for 5 minutes or until cheese is melted.

    Tips

    • Vegetarian: To make this recipe vegetarian, you could use soy crumbles or drained and rinsed beans along with vegetable broth.
    • Heat: Add extra jalapeños, use a spicier salsa, or mix some hot sauce into the beef mixture.

    Serving suggestions

    I recommend serving the totchos with your favorite nacho toppings and sides. In addition to the recommended toppings, feel free to add pico de gallo, sour cream, or guacamole.

    Storage

    Store any leftovers in an airtight container in the refrigerator for up to 2 days.

    To Reheat: Reheat the nachos in a 350°F oven for 10-15 minutes, or microwave on high for 1-2 minutes until hot.

    To Freeze: These nachos do not freeze well, as the tater tots and toppings can become soggy when thawed.

    • ¼ cup chunky tomato salsa
    • 1 packet taco seasoning
    • 2 cups shredded cheddar cheese
    • 1 cup Monterey Jack cheese

    Optional Toppings:

    • 1 cup fresh diced tomatoes
    • ½ cup sliced black olives
    • ¼ cup sliced jalapeños
    • ½ cup sour cream
    • ¼ cup chopped green onions
    • Shredded lettuce

    Instructions

    • Preheat oven to 425°F. Line a baking sheet with parchment paper.
