    Ingredient notes and substitutions

    • Chicken breast: Boneless skinless thighs make an excellent alternative.
    • Olive oil: Avocado oil or grape seed oil are both good choices.
    • Chicken stock: You can use chicken broth or bullion if you cannot find stock. You can also use reduced-sodium broth or no salt broth to better control the salt level in the dish.

Step 5: Add the butter and garlic to the pan and cook for one minute.

Step 6: Deglaze the pan with the lemon juice and chicken stock.

    Tips

    • Lemon flavor: To bring out the lemon flavor, zest the lemon into the sauce when you deglaze the pan.
    • Heat: If you'd like to add a bit of heat, add red pepper flakes when you deglaze the pan. You can also add them to individual plates when serving so as not to spice the whole dish.

    Serving suggestions

I recommend serving this chicken with mashed potatoes, roast potatoes, or baked potatoes. Steamed or sauteed vegetables, like carrots, asparagus, or broccoli, or a fresh green salad will help to round out the meal.

    Storage

Lemon pepper chicken should be stored in an airtight container in the refrigerator. It will keep for 3-4 days when properly stored in the fridge.
