    Sundried tomato chicken pasta is an easy but flavorful recipe that is so simple to make. This dish has diced cooked chicken and sundried tomatoes in a rich, parmesan cream sauce.

    This pasta can be made in just 30 minutes, which makes it a perfect dinner for busy weeknights. So you can whip it up any time and enjoy a restaurant-quality bowl of pasta with almost no work!

    • Pasta: You can use a similar shape of pasta like
    • Sundried tomatoes: Roasted red peppers work well in place of the tomatoes.
    • Parmesan Cheese: A similar cheese like pecorino works well.
    • Seasonings: Adjust according to taste; fresh herbs like basil, oregano, and thyme can be used in place of the dried seasoning.

    Step 1: Cook penne pasta according to package instructions until al dente. Drain and set aside.

    Step 2: In a large skillet, heat olive oil over medium heat.

    Step 5: Add chopped sun-dried tomatoes and Italian seasoning; Cook for an additional 1-2 minutes stirring regularly.

    Step 6: Pour in the heavy cream and chicken broth. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.

    Step 7: Reduce heat to low and stir in the grated Parmesan cheese until melted and combined.

    Tips

    • Vegetarian: To make the pasta vegetarian, omit the cubed chicken and use veggie broth in place of the chicken broth.
    • Veggies: You can sauté spinach, mushrooms, or zucchini with the onion to increase the amount of veggies.
    • Lighter: Feel free to use less cream if you prefer.
