uncooked penne pasta

diced white onion

sun-dried tomatoes in oil
drained and chopped

Italian seasoning

heavy cream

reduced-sodium chicken broth

cup
grated Parmesan cheese

cooked
cubed chicken
Salt and pepper
Chopped fresh parsley for garnish

Instructions
Cook penne pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat.
Add onion sauté until softened about 3-4 minutes;
Stir in garlic and cook for 30 seconds stirring the entire time.
Add chopped sun-dried tomatoes and Italian seasoning; Cook for an additional 1-2 minutes stirring regularly.
Pour in the heavy cream and chicken broth. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.
Reduce heat to low and stir in the grated Parmesan cheese until melted and combined.
Add the cooked penne pasta and cubed chicken to the skillet. Toss to coat evenly with the sauce.
Season with salt and pepper and additional Italian seasoning, if desired.
Serve garnished with chopped fresh parsley, if desired.
Notes
Pasta:
You can use a similar shape of pasta like
Sundried tomatoes:
Roasted red peppers work well in place of the tomatoes.
Parmesan Cheese:
A similar cheese like pecorino works well.
Seasonings:
Adjust according to taste; fresh herbs like basil, oregano, and thyme can be used in place of the dried seasoning.
