Roll out the dough to a 10-12” circle, depending on your desired thickness and size. Prick the dough all over with a fork (to prevent it from bubbling up).
Place the crust on a baking sheet and parbake for 3-5 mins, until it’s slightly golden and starts to get puffy.
Remove the pizza crust from the oven and reduce oven temperature to 450˚F.
Spread the pizza sauce evenly over the pizza crust, leaving about ½ inch of space around the edge.
Sprinkle the shredded mozzarella cheese over the pizza sauce.
Place the prosciutto slices on top of the cheese.
Bake for 7-9 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
While the pizza is baking, whisk together the olive oil, lemon juice and a pinch of salt and pepper.
When the pizza is finished baking, remove it from the oven and let it cool for a few minutes.
Toss the arugula with the olive oil dressing.
Top the pizza with the dressed arugula.
