Ingredients

99% lean ground turkey

reduced-sodium chicken broth

can fire roasted tomatoes

tomato paste

can black beans
drained and rinsed

tablespoon
chili powder

tablespoon
ground cumin

teaspoon
smoked paprika

teaspoon
dried oregano
Instructions
Press SAUTE on the Instant Pot.
When HOT, add 2 tablespoons oil and swirl to coat.
Add the sweet potato, and until it starts to soften, about 3-4 minutes.
Season with salt and pepper.
Remove the sweet potatoes to a plate.
Add the remaining tablespoon of oil.
Stir in the onion, garlic, and ground turkey.
Cook until the meat is cooked through and no longer pink, about 5-6 minutes, stirring regularly.
Press CANCEL.
Stir in the sweet potatoes, broth, tomatoes, tomato paste, beans, and spices.
Season with salt and pepper.
Close and lock the lid.
Turn the pressure release valve to SEALING.
Press MANUAL HIGH pressure and adjust the time to 10 minutes.
Once the cooking time has finished, carefully release the pressure by turning the pressure release valve to VENTING.
Give it a good stir and season with additional salt and pepper as needed.
Notes
Turkey:
You can substitute lean ground turkey or even ground chicken for the extra lean ground turkey.
Tomatoes:
Feel free to substitute diced tomatoes in place of the fire-roasted tomatoes.
Seasonings:
You can adjust the seasonings to your liking. For example, if you want spicier chili, you can add more chili powder.
