Ingredients

ounce
can coconut milk
I use lite coconut milk.
⅔
cup
crunchy peanut butter

tablespoons
brown sugar

cup
soy sauce low-sodium

tablespoons
fish sauce*
2
tablespoons
rice vinegar

tablespoons
ginger peeled and minced

tablespoon
chili or garlic chili sauce
1
teaspoon
sesame oil

garlic cloves minced
3-4
pounds
boneless skinless chicken breast
in 1-inch cubes
Chopped peanuts
Cilantro
Instructions
Stir all of the ingredients up to the chicken (first 10) together until combined.
Add cubed chicken to slow cooker.
Pour sauce over chicken.
Cover, and cook on LOW for 3-4 hours.
If sauce it too thin, remove cover, and continue to cook for 20-30 minutes on LOW.
Serve with rice, and top with chopped peanuts and cilantro, if desired.
Notes
*If you don't have/can't find/don't like fish sauce, you can use an equal amount of soy sauce instead.
